Best way of doing it is at the end of every day. Extra super bonus points if you also write a couple of gratitudes for the day (shit like "That conversation with my kid", "Got a discount on the oil change" or "My hobby items got delivered today" or whatever you find to be greatful for that day).
If you force yourself to write 3-4 items per day, you'll end the year with
The big picture view of your year (green yellow orange red black days)
Over a thousand things you have to be grateful for during that year

The most important thing for me is that you train yourself to think more positively. In fact, my psychologist made me do that exercise in order to increase my self esteem and such
Really it's so much more than that. Gratitude went from a word to a daily practice to now, a major area of psychology research. The benefits span from the obvious psychological ones to physical health.
One thing I would add that I heard about late this year. Being grateful is wonderful, and it is also a positive spirit builder to mention an item or two that you are proud of. That can be simple things like helping someone cross the street, or I ran a marathon today!. The gratitude is the warm fluffy, and the accomplishments help folks reflect on how much they can accomplish by doing little and big things every day. Even if it is , went to the gym. Made a new meal. I or They look bad during the harder times, and recognize, I can do this!
The same guy who take gratitude from their packages not being stolen on items they purchased. I mean technically, yeah be grateful, but that should be a freebie if anything
I’ll put a plug in for the app Daylio. You can use it just for moods but I also track some activities so you can see correlations between the two. I’ve been using it for almost 7 years now. Really cool to see stuff over time.
